Black Chokeberry - Aronia melanocarpa

As the name suggests, the berries are astringent but you can enjoy them baked into things or made into jam.

The berries are high in fiber, vitamin C, and manganese. They have higher antioxidant properties than most fruits, reduce blood pressure, could help prevent diabetes, colon cancer, and coronary artery disease. Chokeberries have also been found to assist with bacterial infections, heart health, neurological diseases, and particularly they have shown to help strengthen the liver.

Slippery Elm - Ulmus rubra

There are two common elms in the Eastern USA. Slippery, AKA red elm, and American elm. It's easy to tell the difference when the leaves are out. "Slippery" in the name does not correspond to how the leaves feel because they are very rough like sandpaper. American elm leaves are smooth. It gets the name for the inner bark which can be boiled into a sweet liquid that is great for eliminating inflammation in the intestines, soothing the digestive tract, and sore throats. It has iron and potassium which increases circulation to boost oxygenation.

In short, the anti-inflammatory effects are good for heartburn, hemorrhoids, IBS, stomach ulcers, bladder/urinary tract infections, and preventing infections on the gums. It's been called a diuretic and a detox for the gut, that of which leads to less mental stress.

If you're a forager, you also know that the tubers (root balls) are nicknamed fairy spuds.

These are like tiny potatoes with some sweetness, and many describe a favorable chestnut flavor. You can eat all parts of Spring Beauty, raw or cooked. It's been noted, however, that raw tubers could cause irritation to the throat. Native tribes made a poultice - a mashed moist mass applied to the skin on agitated areas - for eye issues, urinary tract problems, sore throats, dandruff, convulsions, and contraception.

About Ruby Stathers

Ruby is mainly self-taught, except for a few introductory art classes through public school and one college elective. Growing up, she always enjoyed sketching and began painting with acrylics casually in 2015, with a snowballing of interest over the years. Now she also creates digital photography art, taken from her own perspective, keeping a focus on nature, while incorporating surreal and visionary styles.


Her hometown is in Southeast Ohio, and she has since earned a degree in hospitality management, to then forest management, hopping around to many different jobs around the U.S. before realizing what feels most like her true purpose and passion in art and nature.
